Carrot Cake

Everyone loves cake but this one contains 1 of your 5 a day 🥕😀


Makes: 8 / 12 portions


Ingredients:

  • 4 eggs

  • 125ml rapeseed oil

  • 330g caster sugar

  • 8ml vanilla extract

  • 208g plain flour

  • 7g bicarbonate of soda

  • 8g baking powder

  • 2g salt

  • 4g ground cinnamon

  • 225g grated carrot



Topping

  • 80g soft butter

  • 200g cream cheese

  • 400g icing sugar

  • 4ml vanilla extract











Method:


1.. Grease & line a 9 inch tin with parchment paper

2.. Pre heat oven Gas 3 / 175 degrees

3.. Put eggs, oil, vanilla extract & caster sugar in a mixing bowl a beat together.

4.. Mix together the flour, bicarb, baking powder, salt and cinnamon.

5.. Add all the dry mixture into the egg / oil mixture and whisk together.

6.. Fold in the grated carrot

7.. Pour mixture into lined baking tin

8.. Bake for approximately 50 minutes or until a skewer comes out clean when placed in the centre of the cooked cake.

9.. Leave to cool

10.. Make cream cheese topping .. Mix together butter, cream cheese & vanilla. Save icing sugar into the mixture and beat all the ingredients together.

11.. Decorate with grated carrot
