Ingredients:
2 large chicken breast fillets ( cut into thin strips)
2 peppers ( finely sliced)
1 large red onion ( finely sliced)
2 dessert spoons olive oil
25g fajitas spice
4 tortilla wraps
Fresh coriander
Sour cream
Serves 2 people
Method:
1. Marinade chicken strips in 1 dessert spoon of oil & fajitas spice for an hour ( or this can be marinaded over night if convenient )
2. Place a wok or frying pan on to heat. (I tend to use my actifry as it requires less oil)
3. Once hot add olive oil.
4. Stir-fry the chicken for about 5 minutes or until cooked.
5. Add onions & peppers and continue to stir-fry for another 4 minutes
6. Warm wraps (20 seconds in a microwave)
7. Spread sour cream on wrap ( personal taste)
8. Add some of the chicken mix. Roll wrap. Cut & serve.
Serving suggestion:- Accompany with homemade salsa, seasonal salad or add grated cheese or carrot to the wrap.
This dish can be made to your taste so you can add different vegetables or vegetarian protein, strips of beef or whatever your family love.
