Ingredients:
9oz plain flour
6oz unsalted butter
3oz caster sugar
1 egg yolk
1lb Apples ( use either tinned or stew down peeled/ cored Fresh Bramley Apples)
2 teaspoons demerara sugar
2 teaspoons ground cinnamon
Icing sugar to dust
Method:
1. Put flour, butter & caster sugar in a mixing bowl & mix together until a sandy texture
2. Add egg yolk and continue to mix (using a beater attachment if using a mixer)
Continue binding together until it becomes a soft pliable dough. Set aside to rest
3. Prepare apples if fresh. Once prepared add demerara sugar & cinnamon, stir together & place in a colander to allow excess juice to drain off
4. Lightly grease with butter an 8inch tin
5. Roll out the pastry & line the tin allowing it to slightly over hang the edge
6. Add the apple mixture and then lid the top of the pie
7. Trim & crimp the edges
8. Put an air hole in the centre of the pastry
9. Cook at Gas Mark 3 for approx 50 / 60 minutes
10. Leave to cool & allow the pastry to set prior to removing from the baking tin
11. Serve with custard, cream, creme friache or fruit coulis
