The Blueberry Bellini Cocktail

Do you fancy a beautiful bubbly beverage to start your weekend? Well, here is a perfect bubbly cocktail full of vibrant colour and made with healthy blueberries and prosecco. This crisp and fruity cocktail is a perfect complement to the start of any evening.


Serves: 2


Preparation Time: 5 minutes


Cooking time: 15 minutes


Ingredients:

  • 50ml sugar

  • 50ml water

  • 110g fresh or frozen blueberries

  • 170ml chilled Prosecco










Instructions:

1. For the blueberry puree: In a small saucepan, add the sugar, water and blueberries. Stir together.

2. Bring to a simmer and allow to cook for approximately 10 minutes. After this time, the sugar should be dissolved. Leave to cool.

3. Once cooled, transfer the cooled mixture into a blender and puree until smooth. If desired, you can strain the puree through a fine mesh strainer to remove the seeds.

4. Pour the blueberry puree into two individual prosecco flutes or glasses. For each individual serving then add 3 ounces of prosecco to each flute or glass. Gently stir to mix.

5. Place fresh blueberries on a cocktail stick or sprig of rosemary and place in the flute or glass for decoration.

Notes -

  • The blueberry puree can be made a few days ahead of time and refrigerated covered until ready to serve.

  • If you prefer a non-alcoholic version... substitute the Prosecco with a sparkling water, grape juice such as Shloer or lemonade for the Prosecco.
